Fresh fruit stays alive after harvest. It keeps breathing, ripening, and losing water, and that biological clock doesn't stop until it reaches the point of sale. The cold chain exists to slow down that process, but there's one specific moment that defines much of the final outcome: precooling.

When precooling is delayed or done incompletely, the fruit starts its journey at a higher temperature than it should. And that starting point can't be corrected later. Even if the rest of the chain works perfectly, the fruit never fully "cools down properly" after suffering that initial delay.

 


 
What exactly is precooling?

Precooling is the process of lowering the fruit's temperature from the level it leaves the field at down to the optimal storage temperature, before it enters a cold room, packing, or the reefer container. It's not the same as refrigeration: refrigeration maintains a temperature already reached, while precooling is the step of lowering it for the first time, and usually requires more intensive methods such as forced air, hydrocooling, or vacuum cooling, depending on the species.

The time between harvest and precooling, not just the efficiency of the method chosen, is what determines the starting temperature for the entire chain. Every hour of waiting in the field or in the yard, under direct sun, adds heat that later has to be removed, and removing heat is always slower and more expensive than preventing it from building up in the first place.

 

What happens when precooling fails or comes too late

The effects of poor precooling aren't always visible right away. The fruit can leave the origin looking fine and arrive at destination with accelerated ripening, loss of firmness, or greater susceptibility to fungus, problems that at first glance are mistaken for transit damage, when they actually originated before the container was even closed.

This has a direct impact on how the cargo is received at destination. A buyer who detects overripe fruit or losses tends to question ocean transport first, when the real source of the problem may lie in the hours that passed between harvest and entry into the cold room.

 

Best practices for effective precooling

Some practices that reduce the risk at this stage:

  • Minimize the time between harvest and precooling, ideally defining a maximum limit per species.

  • Verify that pulp temperature reaches the target before moving the fruit to the next stage, not just relying on elapsed time.

  • Avoid letting fruit sit in the sun in holding yards before entering the cold room.

  • Record precooling temperature as part of the traceability of the entire route, not just the container's temperature in transit.

  • Coordinate precooling times with the actual availability of cold rooms and reefer containers, so the fruit isn't left ready with no immediate destination.
